Honduras Finca Adolfo - Anaerobic Natural

Bryan Adolfo Bautista Zelaya is the third generation of his family to grow coffee at Finca Adolfo in Marcala, Honduras. While coffee has been cultivated on the land for more than fifty years, Bryan has helped redefine what the farm is capable of. After graduating from university in 2017, he inherited a portion of the family farm at a time when Honduras was grappling with coffee leaf rust and historically low market prices. Faced with uncertainty, Bryan chose to pursue quality.

Working alongside his father, Juan Adolfo, his mother, Maria Dolores, and agronomists from IHCAFE, Bryan began producing carefully crafted microlots that highlighted the unique character of their farm. The results spoke for themselves. In just a few years, the family shifted their focus entirely to specialty coffee, investing in thoughtful farming practices and innovative processing methods. Bryan has since earned Honduras' Five Star Cupping Certification and continues to push the boundaries of fermentation, constantly refining his approach to produce coffees with greater clarity, complexity, and expression.

Finca Adolfo sits between 1,400 and 1,540 meters above sea level in the mountains of Marcala, where cool nights and warm days allow cherries to mature slowly and develop exceptional sweetness. The farm includes eleven productive hectares and a protected hectare of native forest surrounding a natural spring, a reminder that producing great coffee begins with caring for the land. Once planted exclusively with Lempira, the farm now grows Bourbon, Catuai, Pacamara, Parainema, and Gesha, each selected for its potential to express the farm's unique terroir.

This particular lot showcases Bryan's thoughtful approach to processing. Ripe Bourbon and Catuai cherries undergo a carefully managed 96-hour anaerobic fermentation in sealed bags before drying as a natural. The extended fermentation amplifies fruit sweetness and aromatic complexity while maintaining remarkable balance and a clean finish.

In the cup, vibrant blackberry sweetness takes the lead, layered with delicate jasmine florals and a bright, refined acidity. The natural process brings a silky texture and lingering sweetness, yet the coffee remains remarkably clean and transparent. It's a coffee with plenty of character, but one that never loses its sense of balance.
