Balam is a coffee built around the classic El Salvador flavor profile: sweet, balanced, comforting. Sourced from smallholder producers in Santa Ana in an effort to produce a consistent, high-quality washed coffee from one of El Salvador’s most established growing regions. The name Balam means “jaguar” in the Indigenous Maya language.
This is the kind of coffee we’d like to have around all the time if we could. It starts with rich chocolate sweetness but there’s just enough soft citrus like acidity to keep the cup clear. The overall impression is mellow and sweet. The result is clean, chocolatey, and familiar without feeling flat a coffee that works just as well black as it does with milk. In fact it pulls a great espresso shot as it does filter.
This washed coffee is made up of Bourbon, Caturra, Pacas, and Pacamara varieties, producing a delicious and familiar cup.
