Colombia- La Cebrera

Victor Gutierrez’s Colombia Gesha is a coffee that speaks clearly of both the varietal and the place it comes from.

Grown at high elevation in Tolima, Colombia and carefully tended by Victor, this Gesha shows the qualities the varietal is known for floral aromatics, bright acidity, and layered sweetness while still feeling grounded in its origin.

In the cup you’ll notice jasmine and orange blossom first, followed by notes of ripe cherry, refreshing passion fruit, and honeyed citrus. The body is light and tea-like, with a clean structure that lets each flavor come through. The acidity is lively but balanced, adding brightness without sharpness. As the coffee cools, the sweetness becomes more apparent and the florals open up even more.

What makes this coffee special is its sense of balance. Nothing feels over the top. The flavors are clear, composed, and easy to follow from the first sip to the finish.

We roast this coffee with a light touch. The goal isn’t to push it too far, but to preserve the aromatics, highlight the sweetness, and let Victor’s work at origin show in the cup.
